Gelatin (gelatine in British English) is a translucent, colorless, flavorless food ingredient commonly derived from collagen taken from animal body parts. It is brittle when dry and rubbery when moist, and after undergoing hydrolysis it may also be called hydrolyzed collagen, collagen hydrolysate, or collagen peptides. It is widely used as a gelling agent in food, beverages, medications, drug and vitamin capsules, photographic film and paper, and cosmetics.
