Distillers grains are a cereal byproduct of the distillation process, made up of a mix of grains such as wheat, maize and rice, which distinguishes them from brewer's spent grain, a similar byproduct made mostly from barley. They arise from mashing, in which grain is ground, mixed with hot water and treated with enzymes that convert its starch into sugars that dissolve into the liquid wort; the solid material left behind is the distillers grain. Breweries were historically the main source, but ethanol biofuel plants have become a fast growing source. A tonne of maize yields roughly 378 liters of ethanol alongside about 479 kilograms of wet distillers grains or 309 kilograms of dried distillers grains with solubles, while a tonne of wheat yields about 372 liters of ethanol and 457 or 295 kilograms respectively. Distillers grains are mostly sold as fodder for livestock, especially ruminants, with maize based grains serving as a high protein feed for beef cattle; researchers have also explored flour made from them in foods such as cookies and flatbread.
