The sugar industry covers the production, processing and marketing of sugars, mostly sucrose and fructose. Worldwide production of table sugar reached 185 million tonnes in 2017, led by Brazil, India and Thailand. The industry has a long and often difficult labor history, built historically on enslaved and indentured plantation labor, and today it also carries significant environmental effects from cane and beet cultivation and processing.
