Dextran is a complex, branched polysaccharide made of glucose units joined by glycosidic bonds, first identified in wine and now produced commercially through bacterial fermentation, particularly by species of Leuconostoc such as Leuconostoc mesenteroides. Medically it is used as an anticoagulant, to reduce blood viscosity, and as a volume expander for patients in shock, with Dextran 70 included on the World Health Organization's Model List of Essential Medicines. Outside medicine it is also used in laboratory work, including as a matrix for chromatography and in biosensor development.
