Pullulan is a polysaccharide made of maltotriose units, produced commercially by fermenting starch with the fungus Aureobasidium pullulans. In nature it helps the organisms that produce it resist drying out and being eaten, and it also allows the exchange of small molecules across its structure. Commercially it is used mainly in edible films for breath fresheners and oral-care products and as a vegetarian alternative to gelatin in capsules, and researchers are exploring its use as a biomaterial for tissue engineering, including bone, cartilage and intervertebral disc regeneration.
