Almond meal, also called almond flour or ground almond, is made by grinding sweet almonds into a coarse, cornmeal-like texture; almond flour is usually made from blanched almonds with the skin removed, while almond meal can be made from whole or blanched almonds. It is a traditional ingredient in pastries such as macarons, macaroons and French frangipane, and in marzipan, and it has more recently become popular in low-carbohydrate baking, where it adds moisture and a nutty richness to baked goods.
